VINEYARD
Selected hilly vineyards between 200-400 meters above sea level, located in the municipality of Marano, in the classic area of Valpolicella. Calcareous-Eocene type soil.
GRAPES
Corvina Veronese and Corvinone Veronese 75%, Rondinella 25%. Manual harvesting and selection of the bunches in late September-early October.
FRUIT MAKER
Withering from the end of September for about 100 days, with a natural decrease of 35-40% in weight. Great care is taken in checking the integrity of the grapes and the health of the bunch in the loft.
VINIFICATION
Soft pressing of the dried grapes in December / January. Fermentation at controlled temperature and maceration on the skins for 30 days, with 1/2 daily pumping over.
AGING
60% of the wine obtained is aged for 24 months in 20-30-50hl Slavonian oak barrels; the remaining 40% in medium toasted Allier oak barriques for 18 months. Further evolution in the bottle for 6 months.
TASTING NOTES
Deep garnet red color. Ethereal, vanilla, spicy aroma, with hints of cherry, bitter almond and plum. Full, warm and velvety flavor.
