Identity. Virtue written in the etymology of an ancient term: idem, or to be oneself. Cuvée Prestige, essence of Franciacorta in Ca 'del Bosco style. A jewel born in 2007 from thirty years of knowledge. Only the best selections of Chardonnay (75%), Pinot nero (15%) and Pinot bianco (10%) grapes from 134 vineyards are vinified separately and expertly assembled in the reserves of the best vintages (at least 20%), in the magical rite of the creation of the Cuvée. Only after 28 months of aging on the lees can this wine express its richness and identity. A classic Franciacorta, balanced, pleasantly fresh and acidic. Perfect for any occasion.

18 vineyards in Pinot Noir, with an average age of 19 years, located in the municipalities of Erbusco, Provaglio d’Iseo and Passirano.
HARVEST PERIOD
From the first to the third decade of August.
AVERAGE YIELD PER HECTARE
8,700 kilograms of grapes, equivalent to 5,480 liters of wine (yield: 63%).
WINE
The base wines of the Cuvée Prestige are the result of a careful selection of the grapes and a skilful vinification conducted in full respect of the Ca 'del Bosco method. The grapes, handpicked in small boxes, are classified and cooled. Each bunch is selected by expert eyes and hands, to then benefit from exclusive "acini spa". A particular system of washing and hydromassage of the bunches, through three soaking tanks and a drying tunnel. After pressing in the absence of oxygen, all the musts of the base wines ferment in thermally conditioned steel tanks and remain there until the following March. Seven further months of aging are necessary for the wine to become clear, mature and bring out the character of the vineyards of origin. Subsequently the wines are expertly blended with noble reserve wines from the best vintages (from 20 to 30%) in the "magic rite" of the creation of the cuvée. This particular technique gives the Cuvée Prestige a strong personality. The essence of Ca 'del Bosco-style Franciacorta. Only after an average aging on the lees for 25 months can this Franciacorta express all its richness and identity. The dégorgement takes place in the absence of oxygen, using a unique system in the world, conceived and patented by Ca 'del Bosco.
This avoids oxidative shocks and further additions of sulphites. It makes our Franciacorta purer, more pleasant and longer lasting. Finally, each packaged bottle is uniquely marked, to ensure traceability.
