PRODUCTION AREAS
San Benedetto di Lugana, the grapes come from vineyards located in the most suitable and hilly areas. The harvest and the selection of the grapes are strictly manual, the grapes are placed in small boxes of kg. 4.

REFINING AND FERMENTATION
Rasping by oscillation, followed by a rigorous vinification protocol; after a maceration on the skins for about 10/12 hours, at a controlled temperature of about 8 ° / 10 °, we obtain a must, by natural draining, of a light pink onion skin color; then fermented for 14/18 days at a temperature of 18 °. At the end of fermentation the wine is removed from the lees to avoid malolactic fermentation.

Wine of remarkable finesse and character. Backed by a nice sour shoulder. Continuity and balance satisfy the gustatory aspect.
