VINEYARD
From suitable hilly vineyards located at 200-350 meters above sea level, located between Valgatara and Marano, in the Classic area of Valpolicella.
GRAPES
Corvina Veronese and Corvinone Veronese 80%, Rondinella 20%. Manual selection and harvesting of ripe grapes in October.
VINIFICATION
Valpolicella Classico Superiore produced with the traditional “Ripasso” technique. Fermentation and maceration of fresh grapes in October for about 10 days. Racking. The wine completes the maturation phase until January / February in concrete or steel tanks. It is then re-fermented on the pomace of the freshly drawn Amarone, to acquire greater structure, color and complexity.
AGING
Maturation in 20-30-50hl Slavonian oak barrels for 12 months. Further evolution in the bottle for 4 months.
TASTING NOTES
Intense ruby red color. Delicate, ethereal scent, with flavors of jam and fresh fruit. Dry, harmonious, soft flavor with a typical bitter aftertaste.
