VINEYARD
From sunny hilly vineyards located 250 meters above sea level between Valgatara and Marano in the Classic area of Valpolicella.
GRAPES
Corvina Veronese and Corvinone Veronese 70%, Rondinella 30%. Manual harvest of ripe grapes.
VINIFICATION
Crushing of freshly harvested grapes with maceration for about 10 days, fermentation and subsequent racking. In November 15% of grape must previously dried for 40-50 days in the fruit cellar (intended for the production of Amarone) is added to the Valpolicella wine thus obtained. Second slow fermentation followed by maceration for about 20/25 days, which gives the wine greater concentration and particular jam aromas.
AGING
Maturation in large Slavonian oak barrels for 4-6 months. Further evolution in the bottle for 3 months.
TASTING NOTES
Intense ruby red color. Distinct, spicy bouquet. Taste dry, velvety, soft, persistent, full-bodied, with a final hint of cherry and plum. Preserves a pleasant freshness and acidity.
